Strawberry Cream Shortcakes

1 pint strawberries, washed and hulled
8oz. Cream Cheese, at room temperature
½ cup Heavy Whipping Cream
1/3 cup India Tree Fondant Icing Sugar
2 boxes Starr Ridge Orange Almond, Lemon Pistachio, or Chocolate
Shortbread Cookies
1. Whip the cream cheese and sugar on high until light and fluffy. Add
whipping cream and beat until stiff and thick.
2. Dice up all but about 4 strawberries (save for garnish). Fold into cream
mixture. Lightly beat the strawberry cream until well incorporated (only
about 15 seconds).
3. Put a dollop of strawberry cream on each cookie. Slice up reserved
strawberries. Place one slice atop each cookie and serve!
Note: Strawberry Cream can be made 1 day ahead and kept in the fridge.
