Fig & Gorgonzola Terrine
Serves 8 - 12
12 oz. Salemville Gorgonzola cheese, crumbled, at room temp.
6 oz.
Smithfield Cream cheese, room temperature
1 10 oz.  jar
Life in Provence Fig Jam
Assorted Crackers or baguette rounds
1.  Line a small loaf pan (about 6x4x2 in.) with plastic wrap leaving
enough overage to wrap the top of later.

2.  Using an electric mixer, beat gorgonzola and cream cheese in a
medium bowl until well incorporated.  

3.  Spread ½ cup of cheese mixture evenly on the bottom of the
prepared pan.  Spread with ¼ cup fig jam, another ½ cup
cheese, then ¼ cup jam.  Top with remaining cheese mixture.  
Cover the terrine with the overlapping plastic wrap and
refrigerate until firm, about 4 hours.

4.  Remove terrine 30 minutes before serving.  Unwrap the top of
the terrine, and invert onto a serving plate.  Remove the loaf
pan and carefully remove the plastic wrap.  Serve with assorted
crackers and enjoy!
