Crab Corn Chowder with Truffle Oil

1 Frontier Corn Chowder Soup Mix
8 cups Chicken Stock
6 slices Bacon
1 6.5 oz can White Special or Claw Crab Meat
2 cups Heavy Cream
Salt & Fresh Ground Pepper to taste
Da Rosario White Truffle Oil
1. In a large pot add chicken stock and bring to a boil. Add corn chowder soup mix,
cover and allow to boil for 30 minutes on medium high heat.
2. While the soup is cooking, chop the bacon into thin strips and cook on medium
low heat until crisp. Drain and set aside.
3. Add bacon, crab meat with juice, and cream to soup, stirring well. Simmer over
medium low heat stirring occasionally until thickened, about 15 - 20 minutes. Add
salt and pepper to taste.
4. After plating the soup, drizzle a little truffle oil over the soup in each bowl.
