This cheese has a buttery taste and soft, creamy texture with
a thin to medium rind. Pleasant acidity and very sleek finish.
The Green Hill is complimented by ripe melons,
strawberries, roasted nuts, sweet red peppers, tart apples,
and crust baguettes. This cheese is also excellent just
served alone with some plain crackers. Full-bodied white
wines would pair well with our Green Hill. A Viognier or
Champagne would be delightful. If you like red wine, a good
match would be a light bodied red such as a Chinon or St.
Emilion.
Myrtlewood
This cheese is made in the style of a French mountain
cheese. The Myrtlewood is bright yellow in color with a dry,
complex taste and hard texture. The concentrated flavors
help this cheese to be very food and wine friendly. The
Myrtlewood is great served with thinly sliced meat like
proscuitto and sliced melon. It also is great by itself on a
cheese plate or with great farmhouse bread. Our most aged
cow cheese has an intense flavor with a firm texture. This
cheese needs a big Zinfandel or a Ruby Port to magnify the
essence of our oldest cow's milk cheese.
Thomasville Tomme
When it is made the cheese is put into molds when the curd
is still very soft. This results in the smooth and creamy taste.
The Thomasville Tomme can be used in a variety of
applications. It melts well and can be used in anything from
fondue to omelets. Golden yellow color with mellow and
buttery characteristics. This cheese just melts in your mouth
and seems to be a real party pleaser. Thomasville Tomme
makes wonderful grilled cheese sandwiches and macaroni
and cheese. We also like to serve it with ripe melons, thinly
sliced proscuitto and sourdough bread. The mild taste of
our Tomme pairs well with a rich and creamy Chardonnay or
a light bodied red Burgundy.
